Choline: The Missing Nutrient You Need to Remove Liver Fat

We spend a lot of time talking about how to stop fat from getting into the liver (by cutting fructose, lowering insulin).

But what about the fat that is already there? How do we get it out?

It turns out, your liver has a specific shipping department designed to package fat into VLDL particles and ship it out into the bloodstream, where other tissues can use it for energy. Thus removing it from the liver in the process. But that shipping department requires one specific raw material to build the boxes.

If you don’t eat enough of this nutrient, the shipping department shuts down, and the fat stays trapped in your liver.

That nutrient is Choline.

The Science: The VLDL “Moving Truck”

To get triglycerides (fat) out of the liver, your body has to package them into a particle called VLDL (Very Low-Density Lipoprotein).

Think of VLDL as a moving truck.

  • The Cargo: Liver Fat.
  • The Truck Structure: Phosphatidylcholine.

You cannot build the truck without Phosphatidylcholine, and you cannot make Phosphatidylcholine without Choline.

There are actual studies where researchers put people on a choline-deficient diet, and they developed fatty liver in a matter of weeks. When choline was added back, liver fat began to reverse — showing the mechanism works in both directions. It’s one of the most direct mechanisms: No Choline = No Trucks = Fat accumulates in the liver

The “Egg White” Mistake

This is where the “Lean” dieter often shoots themselves in the foot.

In an effort to save calories, many of us switch to Egg Whites. We think we are being healthy by avoiding the cholesterol and fat in the yolk while consuming a lot of protein.

This is a metabolic disaster for the liver.

The yolk is where the magic is. Almost 100% of the egg’s choline is found in the yellow center. When you throw away the yolk, you are throwing away the very nutrient your liver needs to clear out the fat.

So if you have fatty liver, can you eat eggs and egg yolk? YES! You shouldn’t fear the yolk, you should actually prioritize it.

My Choline Protocol

I don’t track my choline in a spreadsheet down to the milligram, but I do have a few non-negotiable rules to ensure my “Shipping Department” is fully funded.

  1. The 1 Egg Per Day Minimum
    I try to eat at least 1 egg per day. They are nature’s multivitamin.
  • Method A (The Scramble): I cook them in a non-stick pan. I season them heavily with Turmeric and Black Pepper. (As I mentioned in my Supplement post, the pepper helps the anti-inflammatory turmeric absorb better).
  • Method B (The Snack): I hard boil them using my dash egg cooker. I eat them cold with a touch of Low-Sodium Soy Sauce. It sounds weird, but the umami flavor makes them a satisfying high-protein snack.
  1. The Cruciferous Daily
    Eggs aren’t the only source. Cruciferous vegetables contain compounds that support liver detoxification pathways and provide some choline.
    I eat at least one of these every single day, sometimes all three:
  • Broccoli
  • Cauliflower
  • Kale

I usually steam the broccoli or air-fry the cauliflower to keep it interesting.

A Note on Supplements

You can buy Choline supplements (like Alpha-GPC or Citicoline).

However, I stick to my “Food First” philosophy. Supplements can be tricky to dose, and some gut bacteria can convert excess supplemental choline into TMAO (a compound linked to heart disease).

It is much harder to overdose on choline when you are getting it from whole eggs and broccoli. Plus, the food comes with the “Fiber Matrix” and protein that pills don’t have.

Summary

If you are eating a low-sugar diet and lifting weights but your liver enzymes are stuck, look at your choline intake.

Are you throwing away the yolks?
Are you skipping the green veggies?

You might have done the hard work of emptying the fuel tank, but you forgot to hire the moving trucks to clear out the warehouse. Eat the yolks.
